FRUITCAKE 2 boxes quick bread mix* 1 cup candied cherries, chopped 1 cup candied pineapple, chopped 2 eggs 1/2 cup water 1 (1-quart) jar mincemeat 1 cup chopped pecans 1 cup chopped walnuts Combine bread mix and fruit in a large bowl. In a small bowl, beat eggs in water; add to bread mixture, along with mincemeat and nuts. Blend well. Pour into a greased and floured 10-inch tube pan. Bake at 350 degrees 1 hour and 20-30 minutes. Remove from pan and cool on wire rack. (*Evelyn uses Pillsbury’s nut bread mix.) |
