POPPY SEED MUFFINS MIX: 3 cups all purpose flour 1/2 teaspoon salt 2 1/4 cups white granulated sugar 1 1/2 teaspoon baking powder 3 eggs, beaten 1 1/8 cup cooking oil 1 1/2 cups milk 4 teaspoons poppy seeds 1/2 teaspoon vanilla 1 1/2 teaspoon butter extract (optional) 1 1/2 teaspoon almond flavoring ICING: 1/4 cup orange juice 1 1/2 cup powdered sugar 1 1/2 teaspoon vanilla 1 1/2 teaspoon almond flavoring
Mix flour, salt, sugar and baking powder until combined thoroughly; fold in eggs, oil, milk, poppy seeds, vanilla, butter extract and almond flavoring, stirring well. Preheat oven to 350 degrees. Grease pan; pour in mixture; bake 1 hour for 3 small loaves or about 20 minutes — less time if you are using a mini muffin pan. Allow to cool on a wire baking rack.
