LOS OSOS SHRIMP SALAD|
3/4 cup mayonnaise
1 tablespoon lemon juice
1 tablespoon soy sauce
3/4 teaspoon ginger
2 cups fresh bean sprouts
2 cups cooked shrimp
1/4 cup minced green onions
1 (8-ounce) can water chestnuts, drained and rinsed
1 (3-ounce) can chow mein noodles
Make dressing by mixing thoroughly mayonnaise, lemon juice, soy sauce and ginger. Set aside.
Cook bean sprouts in boiling water for 2-3 minutes. Drain and chill. Combine chilled sprouts with shrimp, onions and chestnuts. Chill until ready to serve. Just before serving, toss dressing and chow mein noodles with salad.
