LIGHT AS THE SKY PIE 1 (8-ounce) Philly Cream Cheese (softened) 1 (12-ounce) container Cool Whip (thawed completely) 1/2 teaspoon vanilla extract 1 ready-made graham cracker pie crust Fresh strawberries (sliced)
Mix first three ingredients and pour into pie shell. Refrigerate overnight; next day top with sliced strawberries (fat ends down/tips up). You can use any fruit of your choice. I have used blueberries, too, and it’s just as yummy! — Pam Hodge, Office of the Administrator
