POTATO SALAD 6 to 8 large baking potatoes 2 or 3 eggs 1 medium onion, chopped 1/2 cup mayonnaise 1/4 cup salad pickles or relish Seasoning salt and black pepper to taste Paprika
Place whole potatoes and eggs in a boiler. Cover with water and bring to a boil. Boil until potatoes are cooked through, but not mushy. Drain and cool. Peel potatoes and eggs. Cut into cubes and place in a large bowl. Add onion, mayonnaise, pickles, salt and pepper. Toss all ingredients together. Add more mayonnaise if desired. Sprinkle on paprika as a garnish. |
