STRAWBERRY MANDARIN ORIENTAL SALAD 1 package ramen noodles 3 cups iceberg lettuce, torn 3 cups romaine lettuce, torn 1 cup chopped celery 2 tablespoons chopped green onion 1 (10-ounce) can mandarin oranges 2 cups sliced strawberries 1 cup dried cranberries 1/4 cup sliced almonds or other toasted chopped nuts Sweet & Sour Dressing (recipe follows) Prepare and chill dressing. SWEET & SOUR DRESSING 1/4 cup peanut oil 2 tablespoons sugar 2 tablespoons vinegar 1 tablespoons chopped fresh parsley 1/2 teaspoon salt Dash black pepper Dash red pepper sauce Mix all ingredients and chill until ready to serve.
Crumble noodles into a small baking dish, reserving seasoning packet for another use. Bake at 350 degrees for 10 minutes. Cool. Toss remaining ingredients in a salad bowl. Top with noodles and drizzle with dressing just before serving. |
