KYSER BBQ CATFISH 12 (7- to 9-ounce) whole U.S. farm-raised catfish Vegetable cooking spray Vegetable oil Salt SAUCE: 1 pound oleo 3 ounces Durkee’s Famous Sandwich and Salad Sauce 1 cup lemon juice 1 tablespoon salt 1 teaspoon Worcestershire sauce 1 teaspoon horseradish Tabasco sauce to taste
Mix sauce ingredients together in saucepan and simmer until melted. Baste on fish while grilling. Spray grill generously with cooking spray. Dip fish in vegetable oil. Sprinkle cavity of fish with salt. Lay fish on grill and cook over medium coals about 1 hour or until golden brown. Baste often with prepared sauce. Serves 6.
