HOT HOMINY 2 teaspoons butter 2 onions, finely chopped 1 bell pepper, finely chopped 1 pound mild pork sausage, browned and drained 2 (14.5-ounce) cans hominy, drained 1 can Rotel diced tomatoes with green chilies 2 teaspoons Worcestershire sauce 2 cups grated cheddar cheese, plus more for topping Salt and pepper Preheat oven to 350 degrees. In a small pan, melt butter and sauté onions and pepper until softened. Transfer to a large bowl and combine with cooked sausage, drained hominy and Rotel tomatoes. Add Worcester-shire, 2 cups cheese and salt and pepper and stir. Place mixture in a greased 9 by 13-inch baking dish. Top with additional grated cheddar and bake at 350 or until bubbly.
