1 pound peeled and deveined shrimp
2 eggs, well beaten
1/4 cup water
2 cups cracker crumbs
Peanut or vegetable oil for frying
Rinse and drain shrimp. Salt as desired. Thin beaten eggs with water. Dip shrimp one at a time into cracker crumbs, then in egg wash, and back in cracker crumbs. Place coated shrimp on wax paper until all are battered. Fry in hot oil just until golden brown. Drain on paper towels.
