CHICKEN & WILD RICE SOUP
IMPOSSIBLE BUTTERMILK PIE

1 1/2 cups white sugar
1 cup buttermilk
1/2 cup baking mix
1/3 cup butter, melted
1 teaspoon vanilla
3 eggs

Heat oven to 350 degrees. Grease a 9-inch pie plate.
Beat together sugar, buttermilk, baking mix, melted butter, vanilla and eggs until smooth. Pour the filling into the pie plate.
Bake until a knife inserted in the center comes out clean, about 30 minutes. Cool 5 minutes.
