SWEET AND SOUR RED CABBAGE 1 large onion, chopped 3 to 4 tablespoons bacon drippings or cooking oil 1 medium-sized head red cabbage 1/2 cup cider vinegar 1/3 cup sugar
Salt and pepper to taste Sauté onions in oil or drippings in a large pan. Finely cut cabbage and add to onion. Add vinegar, sugar and salt. Simmer 1 hour; do not overcook. Sprinkle with pepper before serving. Yields 8 to 10 servings. |
