3 eggs, beaten
2 cups sugar
1 tablespoon lemon juice
1 stick melted butter
3 tablespoons flour
1 (12-ounce) can evaporated milk
1 cup mashed sweet potatoes
2 tablespoons vanilla
2 unbaked pie crusts

Preheat oven to 350 degrees.
In a large bowl, beat together all filling ingredients until smooth. Divide filling between two pie crusts. Bake for 30 to 40 minutes or until filling is set.
