CONGEALED LIME MOLD|
1 (20-ounce) can crushed pineapple
1/2 cup sugar
1/2 cup water
1 (8-ounce) package cream cheese,
1 (6-ounce) package lime-flavored
1 (12-ounce) can evaporated milk, chilled in freezer
1/2 cup chopped pecans, optional
Non-dairy whipped topping
In a saucepan, combine pineapple and its juice, sugar and water. Bring to a boil. Remove from heat and blend in cream cheese and gelatin. Chill.
When ice begins to form around the edges of evaporated milk, beat until stiff. Add gelatin mixture and beat well. Fold in pecans. Pour into gelatin mold and chill until firm. To serve, invert and top with whipped topping.
