PUMPKIN SPICE CAKE 4 eggs 2 cups sugar 1 cup oil 2 cups plain flour 2 teaspoons cinnamon 1/2 teaspoon salt 2 cups (1 can) Libby’s 100% pumpkin 2 teaspoons soda CARAMEL SAUCE: 1 stick oleo 1/2 cup sugar 1/2 cup brown sugar 1/2 cup cream
Mix eggs, sugar and oil; beat and add remaining ingredients. Grease and flour tube or Bundt pan. Bake at 350 for 50-60 minutes. Delicious as is or can be served with hot caramel sauce. Caramel sauce: Mix together. Bring to a boil; continue stirring and boil for 3 minutes. Pour over cake when serving. — Lynn Cook, Destinations
