SWEET POTATO CASSEROLE 3 cups cooked and mashed sweet potatoes 1 cup sugar 1/4 cup evaporated milk 2 eggs, beaten 1 teaspoon vanilla 1/2 cup margarine 1/8 teaspoon cinnamon TOPPING: 1 cup chopped pecans 1 cup brown sugar 1/2 cup flour 1/2 cup margarine
Combine sweet potatoes and remaining ingredients in a large bowl. Mix thoroughly and place in a casserole dish. Topping: Combine topping ingredients in a separate bowl and spread over sweet potato mixture. Bake at 350 degrees for 20 minutes.
