RED BEAN TOSS 1 (16-ounce) can red beans 3/4 cup thinly sliced celery 1/3 cup chopped sweet pickles 1/4 cup chopped onion 1 cup sharp cheddar cheese, grated 1/4 cup mayonnaise 1/2 teaspoon Worcestershire sauce 1/2 teaspoon chili powder 1/2 teaspoon salt Fritos corn chips, crushed
Drain beans and combine with celery, pickle, onions and cheese. Blend seasonings with mayonnaise. Add to bean mixture and toss lightly. Spoon into an 8 by 8-inch baking dish. Sprinkle with just enough crushed Fritos to cover. Bake at 450 degrees for 10 to 15 minutes. Note: Jackie says this recipe doubles easily.
