1 (9-inch) pie crust
4 tablespoons flour
1 cup sugar
2 tablespoons cocoa
3 eggs, separated
2 tablespoons butter
1 teaspoon vanilla
2 cups milk
1 pinch cream of tartar

In top of a double boiler, combine flour, sugar, cocoa, egg yolks, butter, vanilla and milk. Cook and stir until thickened. Meanwhile, bake pie crust according to package directions for a 1-crust pie until light brown. Pour chocolate mixture into crust.
Heat oven to 325 F. In a mixing bowl combine egg whites and cream of tartar. Beat until stiff, then spread over chocolate filling. Brown in oven.
