JELL-O PIE 1 (12-ounce) box vanilla wafers 2 eggs 1 cup sugar 1 ½ cups pineapple juice 1 (3-ounce) package Jell-O, desired flavor 1 (12-ounce) can evaporated milk, well chilled
Line the sides of two pie plates with vanilla wafers, then crush remaining wafers and press into the bottom of each pie plate. In a boiler, combine eggs, sugar and pineapple juice. Beat and let come to boil. Remove from heat, and mix in gelatin. Cool. In a mixing bowl whip evaporated milk until fluffy and fold in gelatin mixture. Pour in wafer pie shells, and chill until ready to serve. Makes 2 pies.
