Carrot Cupcakes Janice Kendrick, Chambers Co. 1 carrot cake mix 1 cup water ¼ cup peanut oil 2 large eggs Icing: 1 (8-ounce) cream cheese 2 cup 10X sugar 1 teaspoon vanilla 1 cup chopped nuts
Mix all ingredients. Bake in a 350 F preheated oven for 12-15 minutes. Makes 24 cupcakes. Icing: Mix all ingredients. Garnish with small carrots.
