BANANA NUT BREAD ½ cup shortening 1 2/3 cup sugar 3 ripe bananas, chopped 2 eggs 1 ½ teaspoons vanilla 2 cups all-purpose flour 1 teaspoon baking soda ½ teaspoon salt 1 cup chopped pecans ½ cup sour cream Powdered sugar
In a mixing bowl, mix together shortening, sugar and bananas. Add eggs and vanilla; mix well. In a separate bowl, mix flour, baking soda and salt, then add to the banana mixture. Stir in the pecans. Fold in sour cream. Grease 3 small (8-X 3¼-inch) loaf pans, and dust with powdered sugar. Bake at 345 F for 30 to 45 minutes or until a toothpick comes out clean. |
