Low-Fat Blueberry Lemon Muffins

½ cup butter, softened
1 cup sugar
1 teaspoon vanilla
3 eggs
1 cup sour cream
1 ¾ cup all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
2 cups blueberries, dusted with flour
½ cup brown sugar
½ teaspoon cinnamon
½ cup chopped nuts (optional)
Confectioner’s sugar for garnish.

Cream butter, sugar and vanilla. Add eggs, one at a time. Stir in sour cream. Add dry ingredients and mix well. Fold in blueberries. Spread half of batter into greased 9- X 13-inch pan.

In another bowl, mix brown sugar, cinnamon and nuts and sprinkle over batter in pan. Spread remaining batter over top and bake at 350 F for 40-45 minutes.

Cool in pan and sprinkle with confectioner’s sugar.
