6-8 U.S. farm-raised catfish fillets
1 cup grated Parmesan cheese
½ cup butter or margarine, softened
6 tablespoons mayonnaise
6 green onions, finely chopped
½ teaspoon Worcestershire sauce
Tabasco sauce, to taste

Preheat broiler. Mix together cheese, butter, mayonnaise, green onions, Worcestershire sauce and Tabasco in a bowl. Poach catfish fillets, two to three at a time, in a skillet of lightly simmering water for 4-5 minutes. Remove gently and set aside to drain. Place filets in individual au gratin dishes or large baking pan. Spread 2 tablespoons cheese mixture over each. Broil 2-3 minutes, until cheese browns and filet flakes easily. Spoon pan juice over filets before serving.
