Mrs. Box said she and her son, Austin, 14, adapted the south-of-the-border dish from a beef recipe they originally developed for a beef cookoff.
"We substituted bacon and sausage for the beef, and it has become a family favorite," she said.
Mrs. Box said she has entered the St. Clair County Pork Cooking Contest for the past several years, but this was her first time to compete at the state level. As this year's winner, Mrs. Box received a check for $500. Her dish was selected from among 19 county finalists.
Other winners included Eleanor Smith of Houston County, who earned second place and $300 for her Fruited Pork Tenderloin, and Becky Martin of Russell County, who claimed third place and $100 for her Italian Pork Loin. County finalists received $25 each from the Alabama Pork Producers.Click here for the winning recipes.
